Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 4-6 egg yolks
  • 2 teaspoons pure vanilla extract (for vanilla ice cream)
  • Flavors and mix-ins of your choice (such as cocoa powder, fruit puree, chocolate chips, or crushed cookies)

Prepare the Ice Cream Base

In a medium saucepan, blend the heavy cream and whole milk. cookthe mixture over medium heat until it reaches a gentle simmer. Remove from heat. 

Whisk the Sugar and Egg Yolks

Whisk together the grainy sugar and egg yolks in a separate bowl until well combined. This will create a thick, pale yellow mixture.  

Temper the Egg Mixture

Pour about 1/2 cup of the hot cream mixture into the sugar and egg yolk mixture while whisking continuously. This step is important to prevent the eggs from scrambling. Gradually add more of the cream mixture, whisking constantly.

Cook the Custard

Pour the tempered egg mixture onto the saucepan with the remaining cream mixture. Return the saucepan to medium heat and cook, stirring constantly, until the custard thickens barely and coats the back of a spoon. This usually takes around 5-7 minutes. 

Strain the Custard

Strain the custard through a fine-mesh sieve into a clean bowl to remove any lumps or cooked bits. This step ensures a smooth and creamy ice cream base.

Flavor and Chill the Base

Stir in the vanilla extract or any other flavorings you desire, such as cocoa powder for chocolate ice cream or fruit puree for fruity flavors. Cover the bowl with plastic wrap, pressing it on the surface of the custard to prevent skin from forming. Chill the base in the refrigerator for at least 4 hours or overnight.

Churn the Ice Cream

Once the custard base is thoroughly chilled, pour into your ice cream maker according to the instructions. Churn the mixture until it reaches a soft, creamy consistency. This usually takes around 20-30 minutes.

Add Mix-Ins

If desired, add your favorite mix-ins, such as chocolate chips, crushed cookies, or nuts, during the last few minutes of churning.

Transfer and Harden

Transfer the stirred ice cream to an airtight container. Lid the surface with plastic wrap or parchment paper, ensuring it touches the ice cream to prevent ice crystals from forming. Place the container in the freezer and let the ice cream harden for at least 6 hours or until firm.
